Strawberry Shortcake Cake

By Lynn on June 17th, 2010. This post has Comments Off
I have to share this recipe before I forget. I haven’t technically made this…I’ve been saving it for Father’s Day because it looks so special! Found it at Pioneer Woman!!
Ingredients
  • Cake
  • 1-½ cup Flour
  • 3 Tablespoons Corn Starch
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda
  • 9 Tablespoons Unsalted Butter, Softened
  • 1-½ cup Sugar
  • 3 whole Large Eggs
  • ½ cups Sour Cream, Room Temperature
  • 1 teaspoon Vanilla
  • _____
  • Icing
  • ½ pounds Cream Cheese, Room Temperature
  • 2 sticks Unsalted Butter
  • 1-½ pound Powdered Sugar, Sifted
  • 1 teaspoon Vanilla
  • 1 pound Strawberries
Preparation Instructions

IMPORTANT: Be sure to use a cake pan that’s at least 2 inches deep! Before baking, the batter should not fill the pan more than halfway.

Sift together flour, salt, baking soda, and corn starch.
Cream 9 tablespoons butter with the sugar until light and fluffy. Add eggs one at a time, mixing well each time. Add sour cream and vanilla and mix until combined. Add sifted dry ingredients and mix on low speed until just barely combined.

Pour into greased and floured 8-inch cake pan. Bake at 350 degrees for 45 to 50 minutes, or until no longer jiggly like my bottom. Remove from cake pan as soon as you pull it out of the oven, and place on a cooling rack and allow it to cool completely.

Stem strawberries and slice them in half from bottom to top. Place into a bowl and sprinkle with 3 tablespoons sugar. Stir together and let sit for 30 minutes. After 30 minutes, mash the strawberries in two batches. Sprinkle each half with 1 tablespoons sugar and allow to sit for another 30 minutes.

Make icing: combine cream cheese, 2 sticks butter, sifted powdered sugar, vanilla, and dash of salt in a mixing bowl. Mix until very light and fluffy.

Slice cake in half through the middle. Spread strawberries evenly over each half (cut side up), pouring on all the juices. Place cake halves into the freezer for five minutes, just to make icing easier.

Remove from freezer. Use a little less than 1/3 of the icing to spread over the top of the strawberries on the bottom layer. Place the second layer on top. Add half of the remaining icing to the top spreading evenly, then spread the remaining 1/3 cup around the sides.

Leave plain OR garnish with strawberry halves.

IMPORTANT: Cake is best when served slightly cool. The butter content in the icing will cause it to soften at room temperature. For best results, store in the fridge!

Life has been super busy recently. Everywhere, everyone has been super excited and vocal about the new spicy Chick-fil-A sandwich. Great campaign, BTW. So, of course, I had to try one too.

As it happened, I provised hubby that we would eat them for dinner on Monday, the day that they came out, seeing as we missed our chance for a preview sandwich. I was getting my hair done late and only barely made it to Chick-fil-A as they closed. Thank god because I would never hear the end of it! So behold, the spicy chicken…

It was good. I probably prefer the chargrilled chicken, but it was too buzzworthy not to try. It wasn’t that spicy to be honest. The real star is the their marketing and PR team. I am super excited about the other things that they plan on unveiling, like sweet potato fries!

You Are What You Eat

I don’t know about you all but I am pretty picky about what I feed our dog, Batman. I have to be because he has allergies to some of the ingredients in traditional dog food. However, because Batman has such special dog food needs, I have researched what is in store brand dog foods. I just wanted to inform you just of some of the things you may not know:

Choosing Dog Food For Your Dog

Just as the FDA requires nutrition labeling for food consumed by people, there are now standards for puppy and dog nutrition listed on dog food labels. The Association of American Feed Control Officials (AAFCO) is the group that made these suggestions. Evaluating your pet food label will give you information regarding the amount of fat, protein, and carbohydrates the food has.   Not only should you just read the label, you must determine the best ingredients and type of food for your dog.  It is recommended that you avoid foods containing fillers like corn, soy, and wheat as well as those that have chemical preservatives. If you want to find which food your dog likes the most, pick manufacturers that offer samples or have money backguarantees so you can test numerous kinds without spending lots of money or wasting food.

To help you better recognize the contents listed on the dog food labels, here is some other information regarding a few of the ordinary contents.

Meat can include striated very thin muscle, tongue, diaphragm, heart, esophagus, overlying fat and the epidermis, nerves, and blood vessles. Meat frequently refers to the unsoiled flesh of the slaughtered animal.

The lungs, spleen, kidneys, brain, liver, blood, bone, and stomach and cleaned intestines are put into the group of  meat by-products.  Hair, horns, teeth, and hooves are not included.

Poultry By-products: Poultry by-products are unsoiled components of slaughtered fowl including heads, feet, and internal organs (like heart, lungs, liver, kidneys, abdomen, and intestines). It does not include feathers.

Fish Meal: Fish meal is the unsoiled minced tissue of undecomposed entire fish or fish cuttings, with or not including the oil extracted.

Corn Gluten Meal: Corn gluten meal is the by-product following the manufacture of corn syrup or starch, and is the dried remainder after the removal of the bran, germ, and starch.

Brewers Rice: Brewers rice is the small fragments of rice kernels that have been separated from bigger kernels of milled rice.

Butylated hydroxyanisole is a fat additive commonly seen on labels as BHA.

A chemical preservative utilized in dog food to prevent spoilage is ethoxyquin.

Tocopherols: Tocopherols (e.g., vitamin E) are naturally occurring compounds used as natural `.

Instead of picking one dog food make and sticking with it forever,  experts are recommending that you switch up your dogs diet every two to six months.  You could either stick with the identical brand of food or just change the formula or you could switch brands.   Your veterinarian can make suggestions in relation to the best selections for feeding your dog.  For owners who feed their dogs using home-based food (not table scraps), it’s suggested that you use a assortment of foods since not only is the same food all of the time pretty boring, other than it might lead to food allergies or other health problems.

Dog food choices truly aren’t that complex, with commercial diets offered in both wet or dry varieties.  Along with your veterinarian’s counsel, you might talk to dog breeders for their counsel.  Ultimately, you are the one who must choose what food best suits your dog.

With a lower price per pound of big dry food bags, dry food is usually the more low-cost choice. You can obtain a 50-pound bag of food for much less money than a 5-pound bag of the identical food.

Prior to switching your dog over to a entirely new food, work it in little by little by adding some of the new food to the old food for a week or so.  Observe your dog’s conduct, energy, and coat for numerous weeks following switching to a new food to watch for signs of any changes in appearance and make sure you check underneath his dog collar because many times Batman gets irritation on his neck!

I Scream…You Scream…

By Lynn on May 6th, 2010. This post has Comments Off

I am so thrilled that summer is upon us. I’m actually a weird person that loves winter but summer is a close second! I cannot wait to go to the lake, grill out, catch fireflies, go to the ballpark and see fireworks on the fourth of July! Summer is kind of a “party” season. While their are specific events that do elicit celebration, the best part of the summer party season is that most of the time, there is no particular reason for the gathering except to get together with friends, enjoy the fabulous weather, eat, drink and be merry…and I love that! Enjoying life just because.

We are gearing up for our first BBQ this weekend and while Nugget and I were at the store we happened upon this…Banana Pudding Ice Cream by Blue Bell.  Mmmm…FYI we won’t be taking it to the BBQ with us ;)

When not running after a mischevious little boy (let’s call him Nugget) or crazy animal (Batman the labrador), I love to flip through magazines, garden and be outside.
